Honey Glaze

  • 3 tablespoons olive oil Extra virgin olive oil is preferred, but other neutral oils can be used.
  • 3 tablespoons honey Use quality honey for the best flavor; local or wildflower honey is recommended.
  • 2 tablespoons balsamic vinegar Adds acidity and color to the glaze.
  • 2 cloves garlic, minced Freshly minced for savory depth.
  • 1 teaspoon dried thyme Substitute with fresh thyme if available.
  • Salt and freshly ground black pepper to taste Seasoning is key for enhancing natural flavors.

Garnishes (optional)

  • Chopped fresh parsley or toasted sesame seeds For added visual appeal and flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Wash and trim the green beans, and if using whole carrots, peel and cut them into 1-inch thick pieces on a diagonal.
  • Ensure the carrots and green beans are roughly the same size for even cooking.

Make the Honey Glaze

  • In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper until well combined.
  • Taste and adjust seasonings as needed.

Coat the Vegetables

  • Place the prepared carrots and green beans in a large bowl and pour the honey glaze over them. Toss gently to ensure even coating.

Roast the Vegetables

  • Spread the glazed vegetables in a single layer on a large baking sheet. Avoid overcrowding.
  • Roast for 20-25 minutes, checking for tenderness, until the carrots are tender-crisp and the green beans are bright green.
  • For extra caramelization, broil for the last 1-2 minutes, keeping a close eye to prevent burning.

Serve

  • Let the vegetables rest for a minute before serving. Garnish with parsley or sesame seeds if desired and enjoy!

Notes
