  • 1 medium acorn squash (about 2 lb / 900 g), sliced into 1⁄2-inch (1.25 cm) rings, seeds removed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • Salt & pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 2 tbsp dried cranberries
  • 1 tbsp balsamic glaze or cranberry reduction
  • Fresh thyme or parsley, for garnish

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the olive oil, honey, cinnamon, salt, and pepper.
  • Brush this mixture generously over both sides of the acorn squash slices.
  • Arrange the slices on the prepared baking sheet and roast for 25–30 minutes, flipping them halfway through, until they are caramelized and tender.
  • Once cooked, transfer the squash to a serving plate and sprinkle with crumbled feta and dried cranberries.
  • Drizzle balsamic glaze or cranberry reduction on top for a beautiful finish, and garnish with fresh thyme or parsley.

Notes

This dish pairs wonderfully with roasted meats like chicken or turkey. It's also great alongside a simple salad or for a more substantial meal with grains like quinoa or farro.
