  • 1 cup Honey Use raw honey for great flavor and health benefits.
  • 2-3 inches Fresh Ginger Peel and slice into thin pieces. Fresh ginger is recommended for the best flavor.
  • ½ cup Fresh Lemon Juice Juice from about 2-3 medium-sized lemons. Avoid bottled lemon juice.
  • 1 cup Water Plain water to dissolve the honey.

Preparation

  • Peel and slice about 2-3 inches of fresh ginger root into thin slices.
  • Juice around 2-3 medium-sized lemons to yield about ½ cup of juice.

Cooking

  • In a small saucepan, combine the sliced ginger, honey, lemon juice, and water. Mix gently.
  • Place the saucepan over medium heat, stirring occasionally until the honey dissolves completely. Bring to a gentle simmer.
  • Once at a simmer, reduce heat and let it cook for about 10-15 minutes for the flavors to meld.
  • Remove the syrup from heat and let it cool slightly.
  • Using a fine mesh strainer, strain the mixture to separate the ginger slices from the syrup.

Storage

  • Transfer the syrup into a clean glass jar or bottle and store in the refrigerator for up to two weeks.
