  • 1/3 cup honey
  • 1/3 cup ketchup
  • 6 cloves garlic, minced
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 pinch crushed red pepper flakes (optional)

Thickening and Garnish

  • 2 tablespoons cold water
  • to taste chopped scallions (for garnish)
  • to taste sesame seeds (for garnish)

For Serving

  • as needed Rice

Instructions

Preparation

  • Add the chicken thighs to your Crockpot in an even layer.
  • In a bowl, whisk together soy sauce, honey, ketchup, minced garlic, apple cider vinegar, grated ginger, and crushed red pepper flakes (if using) until well combined.
  • Pour the prepared sauce evenly over the chicken thighs in the slow cooker.

Cooking

  • Cover and cook on high for 3.5 hours, or on low for 6 to 8 hours until the chicken is tender and cooked through.
  • Mix cornstarch with cold water to create a slurry, then pour it into the slow cooker. Stir to combine and cook on high for an additional 15 minutes to thicken the sauce.

Serving

  • Leave the chicken thighs whole or shred them using two forks directly in the crockpot. Serve over rice, garnished with scallions and sesame seeds.

Notes

For extra flavor, marinate the chicken thighs in the sauce for a few hours before cooking. Increase crushed red pepper flakes for a spicier dish. Can be made with chicken breasts or tofu as a vegetarian option, adjusting cooking times as needed.
