  • 1 tablespoon vegetable oil For frying
  • 1 teaspoon vegetable oil For stirring vegetables
  • 1 cup thinly sliced peeled carrots
  • 2 cups broccoli florets
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 4 cloves garlic, minced
  • 1/4 cup low sodium chicken broth or water
  • 1/4 cup soy sauce Adjust according to taste

Cooking

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add chicken pieces and cook until browned and cooked through. Remove and set aside.
  • In the same pan, add 1 teaspoon of vegetable oil, carrots, and broccoli. Stir fry for 3-4 minutes until tender.
  • Add minced garlic and stir fry for an additional 30 seconds.
  • Return chicken to the pan.
  • Add chicken broth and soy sauce; stir to combine.
  • Cook for an additional 2-3 minutes until heated through.
  • Serve hot.

Notes

Serve over jasmine rice or noodles. Can be accompanied by steamed edamame or a light cucumber salad. For a spicy twist, add jalapeƱos or sriracha. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
