  • 1 tablespoon vegetable oil divided use
  • 1 teaspoon vegetable oil divided use
  • 1 cup thinly sliced peeled carrots
  • 2 cups broccoli florets
  • 1 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 4 cloves garlic minced
  • 1/4 cup low sodium chicken broth or water
  • 1/4 cup soy sauce

Cooking

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces and stir-fry until cooked through, about 5-7 minutes.
  • Remove the chicken and set aside.
  • In the same skillet, add the remaining oil, garlic, carrots, and broccoli. Stir-fry for about 3-4 minutes until vegetables are tender-crisp.
  • Return the chicken to the skillet.
  • Add chicken broth and soy sauce, stirring to combine.
  • Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
  • Serve hot with rice or noodles.

Notes

For a complete meal, serve over rice or noodles. Consider adding a side salad or steamed dumplings. For extra spice, drizzle with sriracha.
