  • 2 tablespoons Honey Use pure, raw honey; can substitute with maple syrup for a vegan option.
  • 2 tablespoons Balsamic vinegar Choose a good-quality balsamic for best flavor.
  • 2 tablespoons Olive oil Extra virgin olive oil is recommended; avocado oil can also work.
  • to taste pinch Sea salt Essential for seasoning.
  • to taste pinch Black pepper Essential for seasoning.
  • optional Fresh herbs (thyme or rosemary) Recommended for added flavor.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse and trim the Brussels sprouts, removing any wilted outer leaves and cutting them in half.
  • In a small bowl, combine honey, balsamic vinegar, and olive oil. Whisk until well blended.
  • In a large mixing bowl, toss the halved Brussels sprouts with the honey-balsamic mixture, ensuring they are evenly coated.
  • Season generously with sea salt and black pepper.
  • Spread the Brussels sprouts on a baking sheet in a single layer.

Cooking

  • Roast in the oven for 20-25 minutes, or until caramelized and crisp on the edges. Stir halfway through for even roasting.
  • After taking them out of the oven, sprinkle fresh herbs over the top for extra flavor.
  • Serve warm and enjoy!

Notes

For a caramelized finish, broil for an additional 2-3 minutes after roasting. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
