Ingredients

Main ingredients

  • 2 medium onions Yellow or white onions are ideal.
  • 1 cup raw honey Raw honey enhances health benefits.
  • 2 cups water This serves as the base for your syrup.

Optional flavor enhancers

  • a few sprigs fresh thyme or sage Optional for added flavor.

Instructions

Preparation

  • Chop the onions: Start by peeling and chopping your onions into medium pieces.
  • Combine Ingredients: In a medium saucepan, combine the chopped onions, honey, and water.
  • Simmer: Bring the mixture to a gentle boil over medium heat. Once boiling, reduce to a simmer and let it cook for about 30–40 minutes.
  • Strain: After simmering, strain the mixture through a fine sieve into a glass jar or container, pressing down on the onions to extract as much syrup as possible.
  • Cool and Store: Allow the syrup to cool to room temperature, then seal it. Store in the refrigerator for up to a week.

Notes

Always use fresh ingredients for the best flavor. The syrup thickens slightly as it cools, and you can allow it to simmer longer for a thicker consistency.
