  • 6 cups Fresh Tomatoes (preferably Roma or San Marzano) You can substitute canned San Marzano tomatoes if fresh ones aren’t available.
  • 2 tablespoons Olive Oil Extra virgin olive oil enhances the sauce’s richness.
  • 2-3 cloves Garlic, minced Use garlic powder if fresh garlic is unavailable.
  • 1 medium Yellow Onion, chopped Provides depth and sweetness.
  • 1 tablespoon Dried Oregano
  • 1 handful Fresh Basil, torn Dried basil can be used in a pinch.
  • to taste Salt Essential for bringing out natural flavors.
  • to taste Black Pepper Essential for bringing out natural flavors.
  • 1 teaspoon Sugar Can help balance acidity, especially if tomatoes are tart.

Preparation

  • If using fresh tomatoes, score the bottoms with an X. Blanch them in boiling water for about a minute, then transfer them to an ice bath to make peeling easier.
  • Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 chopped onion and 2-3 minced garlic cloves. Cook until they become translucent and fragrant.
  • Chop your peeled tomatoes into chunks and add them to the skillet. If you’re using canned, crush or chop them in the can.
  • Stir in a tablespoon of dried oregano, a handful of torn fresh basil, salt, and pepper to taste.
  • Let your sauce simmer on low for about 30 minutes, stirring occasionally, to allow the flavors to meld beautifully.
  • For a smoother sauce, blend using an immersion blender or transfer to a blender carefully.
  • Always taste your sauce toward the end. Adjust seasoning as needed or add a splash of balsamic vinegar for brightness.
  • Serve your sauce by tossing it with pasta or using it over grilled chicken or pizza.

Notes

Freshness matters; opt for ripe tomatoes for the best flavor. Don't rush the sauté and make sure to taste as you go for the best results.
