  • 10 pounds tomatoes (coarsely chopped) Use ripe, juicy tomatoes for best flavor.
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon lime juice

Preparation

  • Cut the tomatoes into halves or quarters, removing the stems.

Cooking

  • Heat the olive oil in a large pot over medium-high heat until shimmering.
  • Add the tomatoes and cook until they become soft and the peels start to come off the flesh.
  • Remove the pot from the stove and immediately pour the tomatoes into a blender.
  • Puree the mixture until smooth.
  • Pour the puree through a sieve and use a spatula to push the tomato sauce through, leaving the skin and seeds behind.
  • Pour the strained sauce back into the pot.
  • Add the salt and lime juice, and cook over low heat for about an hour or until it thickens.

Serving

  • Once thickened, take it off the stove. You can use it right away or store it in airtight containers in the refrigerator.

Notes

You can store tomato paste in airtight containers, keeping it in the refrigerator for up to a week or freezing it in ice cube trays for several months. Stir occasionally while cooking to prevent sticking.
