Ingredients

  • 3.5 cups chopped tomatoes (or 28-ounce can diced tomatoes)
  • 1/4 small onion
  • 1/3 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 small jalapeno pepper (seeds removed) Add more seeds for extra spiciness.
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar Balances the acidity of the tomatoes.

Instructions
 

Preparation

  • Chop the tomatoes and place them over a strainer for 5 minutes to drain excess liquid.
  • Discard the liquid and add the tomatoes and all remaining ingredients to a blender or food processor.
  • Pulse until blended to your desired consistency.
  • Transfer the salsa to a jar and store it in the refrigerator for up to one week.

Notes

Allow the salsa to sit for at least 30 minutes before serving for the best flavor. Store in an airtight container in the refrigerator.
