Main Ingredients

  • 1 can 14.5 oz can of whole peeled plum tomatoes (undrained)
  • 1 can 10 oz can of Rotel with green chilies
  • 1/4 cup roughly diced yellow onion
  • 1 jalapeƱo (seeded and diced) Adjust the spiciness by adding more or fewer jalapeƱos
  • 1 clove garlic
  • 1/4 to 1/2 cup cilantro leaves (along with tender stems)
  • 1/4 teaspoon ground cumin
  • 1/2 to 1 tablespoon lime juice Add more if needed for taste
  • 1/4 teaspoon kosher salt Adjust to taste
  • 1/4 teaspoon sugar Can balance out spiciness if salsa is too hot

Instructions
 

Preparation

  • Add all the ingredients into a blender or food processor.
  • Pulse in short bursts until the salsa reaches your desired consistency.
  • Taste-test! Use a tortilla chip to check for seasoning. Add more lime juice, salt, or sugar if needed.
  • Transfer the salsa to a bowl, cover, and refrigerate for at least 1 hour before serving.

Notes

Serve with tortilla chips, tacos, burritos, grilled meats, or nachos. Store in an airtight container in the fridge for 3 to 5 days; can freeze for longer storage.
