Preparation

  • In a large bowl, mix flour and salt.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Gradually add cold water, mixing until the dough comes together.
  • Divide the dough into two balls, flatten them into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes before using.

Notes

Store the wrapped disks in the refrigerator for up to 3 days or freeze for up to 3 months, thawing in the fridge before use. Ensure butter is cold, don't overwork the dough, and adjust flour if too sticky.
