Ingredients
  

For the filling

  • 5 pieces fresh peaches, peeled and sliced Use ripe, fresh peaches for the best flavor.
  • 1 tablespoon lemon juice Helps balance the sweetness.
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cornstarch

For the crisp topping

  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar For topping.
  • 1/2 cup cold unsalted butter, cut into cubes Make sure the butter is cold for a crumbly topping.
  • Pinch of salt salt

Preparation

  • Preheat your oven to 350°F (175°C). Lightly butter an 8x8-inch baking dish.
  • In a large bowl, toss the sliced peaches with lemon juice, granulated sugar, brown sugar, cinnamon, vanilla, and cornstarch. Pour the mixture into the baking dish.

Making the topping

  • In another bowl, mix oats, flour, brown sugar, salt, and cold butter. Use your fingers or a pastry cutter to blend the mixture until crumbly.

Baking

  • Sprinkle the topping evenly over the peach mixture.
  • Bake for 35–40 minutes or until the topping is golden and the peach filling is bubbling.
  • Let it rest for 10 minutes before serving. Enjoy warm, ideally with a scoop of vanilla ice cream.

Notes

Cover with plastic wrap or aluminum foil and refrigerate for 3-4 days. Can freeze for up to 3 months. Use nuts like walnuts or pecans for extra crunch. You can substitute peaches with other fruits like apples, berries, or pears.
