Ingredients
  

For the brittle
  • ½ cup salted butter Melted
  • ¾ cup granulated sugar
  • ½ cup light corn syrup
  • cup water
  • ½ teaspoon baking soda To aerate the mixture
  • ½ cup almond slices Can toast for added flavor
  • ½ cup salted peanuts Can substitute with pumpkin or sunflower seeds for a nut-free version

Method
 

Preparation
  1. Line a rimmed baking sheet with parchment paper to prevent sticking and have all ingredients measured and ready near the stovetop.
  2. In a large saucepan over medium-high heat, melt the salted butter completely.
  3. Stir in granulated sugar, light corn syrup, and water into the melted butter, stirring continuously for about 2 minutes until the sugar dissolves.
  4. Insert a candy thermometer into the mixture and cook, stirring frequently, until the temperature reaches 300°F (about 15 minutes).
  5. Once the mixture hits 300°F, remove from heat and quickly stir in the baking soda to aerate the mixture.
  6. Add the almond slices and salted peanuts, then swiftly pour the hot mixture onto the prepared baking sheet.
  7. Using a spatula or back of a spoon, spread the brittle as evenly as possible before it hardens.
  8. Allow the brittle to cool completely for about 30 minutes, then break into pieces and serve or store.

Notes

Store in an airtight container at room temperature for up to two weeks. Freeze in a bag for up to three months; thaw at room temperature before enjoying.
