Homemade Mexican Pizza

A fun and delicious twist on traditional pizza with layers of seasoned beef, refried beans, and melted cheese, perfect for family dinners and game nights.

Ingredients
  

Main ingredients

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato diced
  • 1 green onion diced
  • 1 small can sliced black olives

Instructions
 

Preparation

  • Preheat oven to 375°F.
  • Lightly spray two baking sheets with non-stick spray and place three tortillas on each.
  • Bake tortillas for 3-5 minutes, flip, and bake another 2-5 minutes until golden and crispy. Set aside.

Cooking

  • In a skillet over medium-high heat, cook and crumble the ground beef. Drain excess grease.
  • Stir in taco seasoning and water. Bring to a boil, reduce to medium-low, and simmer for 10 minutes. Set aside.
  • Heat the refried beans in a microwave-safe bowl.

Assembly

  • Spread a thin layer of refried beans on one tortilla.
  • Add 1/3 of the seasoned beef mixture, then place another tortilla on top.
  • Spread 3 tablespoons of enchilada sauce over the top tortilla, sprinkle with cheddar and pepper-jack cheese.
  • Add diced tomato, green onion, and black olives. Repeat with remaining tortillas to make three pizzas.

Baking

  • Bake for 5 minutes, or until the cheese is melted and bubbly.

Serving

  • Let cool slightly before cutting and enjoy this delicious homemade Mexican pizza!
  • Add a dollop of sour cream or guacamole for extra flavor!

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or microwave.
