  • 2 tablespoons olive oil Extra virgin is recommended.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 28 ounces crushed tomatoes (2 cans of 14 oz each) Use quality canned tomatoes.
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • to taste Salt and pepper Adjust according to preference.
  • as needed Fresh basil for garnish Optional garnish.

Preparation and Cooking

  • Heat olive oil in a large saucepan over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add crushed tomatoes and tomato paste into the saucepan.
  • Season with oregano, basil, salt, and pepper.
  • Bring the sauce to a simmer, then reduce the heat and let it cook for 20-30 minutes, stirring occasionally.
  • Taste and adjust seasoning if necessary.
  • Serve hot with pasta and garnish with fresh basil.

Notes

Use fresh ingredients whenever possible. For a smoother sauce, blend it after cooking. Consider adding red pepper flakes for heat or red wine for richness.
