Ingredients
  

Main Ingredients

  • 2 lbs fresh Roma tomatoes (or San Marzano) Use ripe tomatoes for the best flavor.
  • 4 cloves garlic, minced Be careful not to overcook to avoid bitterness.
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, chopped Add fresh at the end of cooking.
  • 1 tsp salt Adjust based on taste.
  • 1/2 tsp black pepper Adjust based on taste.

Preparation

  • Wash and quarter the tomatoes. Chop the onion and mince the garlic.

Cooking

  • In a large pot over medium heat, add olive oil and sauté the onion until translucent, about 5 minutes.
  • Add garlic and stir until fragrant, around 1 minute.
  • Add the quartered tomatoes along with salt and pepper. Stir well and let the mixture simmer for 20-30 minutes until thickened.
  • Blend the sauce using an immersion blender or regular blender until smooth.
  • Return the sauce to low heat, stir in fresh basil, and simmer for another 5 minutes before serving.

Notes

To store, let the sauce cool completely, transfer to an airtight container, refrigerate for up to one week, or freeze for up to three months. You can enhance flavor by adding a splash of red wine while simmering.
