Preparation

  • Gather your ingredients and equipment: saucepan, candy thermometer, parchment paper.
  • In the saucepan, mix together equal parts honey and lemon juice. Add freshly grated ginger if desired.

Cooking

  • Heat the mixture on medium heat, stirring until combined.
  • Allow the syrup to cook without stirring until it reaches 300°F (hard crack stage).
  • Pour the hot mixture onto a parchment-lined baking sheet.

Finishing

  • Allow the mixture to cool completely and then break or cut into bite-sized pieces.
  • Store in an airtight container or wrap individually for easy access.

Notes

For a vegan version, substitute honey with agave syrup. Avoid high heat to prevent crystallization or burnt sugar. Use a candy thermometer for best results.
