  • 2 pieces frozen chicken breasts Can substitute with chicken thighs for more flavor.
  • 8 cups chicken broth Low-sodium broth can make it healthier.
  • 1 can cream of chicken soup (family-size)
  • 1/2 cup butter Adds richness to the soup.
  • 1 teaspoon poultry seasoning
  • 1 teaspoon onion powder
  • to taste salt and pepper Adjust according to preference.
  • 12 oz dry egg noodles Follow package instructions for cooking.

Preparation

  • In a large pot, combine the frozen chicken breasts and chicken broth, bringing it to a boil.
  • Once boiling, reduce heat and add the cream of chicken soup, butter, poultry seasoning, onion powder, salt, and pepper.
  • Stir well and let simmer for 15-20 minutes until the chicken is cooked through.

Cooking

  • Remove the chicken breasts, shred them, and return them to the pot.
  • Add the egg noodles and cook according to package instructions until tender.

Serving

  • Serve hot in bowls, optionally garnished with fresh herbs like parsley, and pair with crusty bread.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Can freeze for up to three months, but omit noodles when freezing to prevent them from becoming mushy upon reheating. For added flavor, use fresh vegetables like carrots and celery. Rotisserie chicken can be used for faster preparation.
