  • 3 cups granulated sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 cups light corn syrup
  • 1 teaspoon sea salt
  • 24 ounces evaporated milk

Instructions
 

Cooking Caramels

  • In a large saucepan, combine granulated sugar, brown sugar, corn syrup, and butter. Cook over medium heat, stirring until the sugars dissolve.
  • Once boiling, add the sea salt and evaporated milk.
  • Continue to cook, stirring frequently, until the mixture reaches 245°F on a candy thermometer (firm ball stage).
  • Pour the mixture into a buttered pan and allow to cool completely.
  • Once set, cut into squares and wrap in wax paper to store.

Notes

Store your Homemade Caramels in an airtight container at room temperature or refrigerate for longer shelf life. Let them come to room temperature before serving if refrigerated. Can also be frozen, ensure they are well-wrapped.
