  • 1 tsp bicarbonate of soda Make sure to add quickly after removing from heat.

Cooking

  • Heat the sugar and honey in a saucepan over medium heat until the mixture starts bubbling.
  • Remove the saucepan from the heat and quickly add the bicarbonate of soda. Stir the mixture rapidly.
  • Immediately pour the mixture onto a flat, non-stick plate.
  • Allow it to cool for about 20-30 minutes, then break it into pieces.

Store Hokey Pokey in an airtight container at room temperature, best enjoyed within a week. Avoid refrigerating to maintain texture.
