  • 1 lb Lean Ground Beef
  • 1 Small Yellow Onion, diced
  • 4 Medium Russet Potatoes Slice thinly for even baking
  • Salt and Pepper to taste
  • 1 cup shredded Cheddar Cheese (optional) Adds a creamy finish to the casserole

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef and diced onion over medium heat until the meat is cooked through and the onion is translucent.
  • Slice the russet potatoes thinly.

Assembly and Baking

  • In a greased baking dish, layer half of the potatoes, followed by the beef mixture, and then the remaining potatoes.
  • Season with salt and pepper.
  • Cover with aluminum foil and bake for about 1 hour.
  • If using cheese, remove the foil, sprinkle it on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serving

  • Let it cool for a few minutes before serving. Enjoy!

Notes

Pairs excellently with a crisp green salad or garlic bread. Can be stored in an airtight container in the refrigerator for up to 3 days or frozen unbaked for 3 months.
