  • 1 Small Yellow Onion, diced Diced for flavor.
  • 4 Medium Russet Potatoes Thinly sliced.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the diced onion over medium heat until the beef is cooked through.
  • Slice the russet potatoes thinly.

Baking

  • In a baking dish, layer half of the potatoes, followed by the cooked beef and onion mixture, and then the remaining potatoes on top.
  • Cover the dish with aluminum foil and bake for about 1 hour, until the potatoes are tender.
  • Remove the foil and bake for an additional 15 minutes to crisp the top.

Notes

Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months. Serve with sour cream or cheese on top for added flavor.
