  • 1 lb Lean Ground Beef Use lean ground beef for a healthier option.
  • 1 Small Yellow Onion, diced
  • 4 Medium Russet Potatoes Slice thinly for even cooking.
  • Salt and Pepper to taste
  • 1 cup Shredded Cheddar Cheese (optional) You can use different types of cheese for variation.
  • 1 cup Beef Broth or Water

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the diced onion until fully cooked. Season with salt and pepper.
  • Slice the russet potatoes thinly.

Assembly

  • In a greased baking dish, layer half of the sliced potatoes, then add the cooked beef and onion mixture.
  • Top with the remaining potato slices.
  • Pour beef broth or water over the top.
  • If using, sprinkle cheddar cheese on top.

Baking

  • Cover with aluminum foil and bake for 1 hour.
  • Remove the foil and bake for an additional 15-20 minutes, or until potatoes are tender and the top is golden brown.
  • Let cool slightly before serving.

Notes

Serve with a fresh garden salad, steamed green beans, or broccoli. For an extra touch, add a dollop of sour cream and chives.
