  • 1 lb Lean Ground Beef
  • 1 small Yellow Onion, diced
  • 4 medium Russet Potatoes

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef and onion over medium heat until the beef is cooked through.
  • Slice the russet potatoes thinly and layer them in a greased baking dish.
  • Add the cooked beef and onion mixture on top of the potatoes.
  • Cover the dish with aluminum foil and bake for 1 hour.
  • Remove the foil and bake for an additional 15 minutes until the potatoes are tender and lightly browned.
  • Let it cool slightly before serving. Enjoy!

Notes

Hobo Casserole pairs beautifully with a simple green salad and a side of crusty bread. You could also serve it with a dollop of sour cream or tangy barbecue sauce for an extra kick. Store in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
