Main Ingredients
  • 1 lb Lean Ground Beef
  • 1 Small Yellow Onion, diced
  • 4 Medium Russet Potatoes Slice thinly for even cooking.
  • Salt and Pepper to taste
Optional Ingredients
  • 1 can Cream of Mushroom Soup Optional
  • Shredded Cheese Optional, for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Add the diced onion and cook until softened.
  3. Slice the potatoes thinly and layer half of them in the bottom of a greased baking dish.
  4. Spread the beef and onion mixture over the potatoes.
  5. Layer the remaining potatoes on top.
  6. If using, pour the cream of mushroom soup over the top and sprinkle with salt and pepper.
Cooking
  1. Cover with foil and bake for 1 hour, then uncover and bake for an additional 15-20 minutes, or until potatoes are tender.
  2. Optionally, top with shredded cheese and bake until melted.
  3. Let it cool slightly before serving. Enjoy!

Notes

Hobo Casserole pairs well with a fresh green salad or steamed vegetables. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
