Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add the diced onion and cook until softened.
- Slice the potatoes thinly and layer half of them in the bottom of a greased baking dish.
- Spread the beef and onion mixture over the potatoes.
- Layer the remaining potatoes on top.
- If using, pour the cream of mushroom soup over the top and sprinkle with salt and pepper.
Cooking
- Cover with foil and bake for 1 hour, then uncover and bake for an additional 15-20 minutes, or until potatoes are tender.
- Optionally, top with shredded cheese and bake until melted.
- Let it cool slightly before serving. Enjoy!
Notes
Hobo Casserole pairs well with a fresh green salad or steamed vegetables. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
