  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 15 oz can diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt For creaminess
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil for cooking

Instructions
 

Cooking the Pasta

  • Cook the penne pasta according to package instructions. Drain and set aside.

Preparing the Beef Mixture

  • In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  • Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula.
  • Stir in the diced tomatoes (with juices), beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Let it simmer for a few minutes.

Combining and Serving

  • Add the cooked pasta to the skillet with the beef mixture. Toss everything together until well combined.
  • Serve your creamy beef pasta garnished with fresh basil or parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with a little water or beef broth. For extra flavor, consider adding vegetables like spinach or bell peppers, and use more Greek yogurt or Parmesan cheese for a creamier texture.
