Pasta and Beef Ingredients

  • 8 oz penne pasta
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 15 oz diced tomatoes (with juices) 1 can
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil for cooking

Instructions
 

Preparation

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.

Cooking

  • Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula.
  • Stir in the diced tomatoes (with juices), beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Let it simmer for a few minutes.
  • Add the cooked pasta to the skillet with the beef mixture. Toss everything together until well combined.

Serving

  • Serve your creamy beef pasta garnished with fresh basil or parsley.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop. Customize with extra vegetables or different types of pasta as desired.
