Cooking Procedure
- In a large Dutch oven or saucepan, heat the olive oil over medium-high heat.
- Add the ground beef (or turkey/chicken) and cook it until it’s no longer pink, breaking it up as it browns.
- Drain any excess grease to keep your chili hearty but not overly greasy.
- Stir in the chopped bell peppers, onions, and diced jalapenos, and cook them until they soften, about 5 minutes.
- Mix in the beans, crushed tomatoes, chili powder, cumin, and fresh cilantro. Give it a good stir to combine all the ingredients.
- Allow the chili to simmer on low heat for at least 20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot with your favorite hot sauce on the side.
Notes
Hearty Chili can be served with cornbread, topped with cheese, diced avocados, or sour cream. It's also delicious served over rice or quinoa. For storage, cool completely before transferring to an airtight container and refrigerate for up to 4 days. For longer storage, freeze in portions.
