  • 2 medium zucchinis Grated and moisture removed
  • 2 cups whole wheat flour For a heartier texture
  • 1 teaspoon baking soda For leavening
  • 1 teaspoon baking powder For leavening
  • 1 teaspoon salt To enhance flavor
  • 0.5 cups brown sugar Can substitute with maple syrup or honey
  • 2 large eggs
  • 0.5 cups applesauce or Greek yogurt To reduce unhealthy fats

Optional Additions

  • 1 cup chopped nuts or dark chocolate chips For added texture
  • 1 teaspoon cinnamon Optional spice addition
  • 1 tablespoon vanilla extract Optional for additional flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  • Grate the zucchinis and place them in a clean kitchen towel, wringing out the excess moisture.
  • In a large mixing bowl, combine whole wheat flour, baking soda, baking powder, salt, and any spices.
  • In another bowl, whisk together your sweetener, eggs, and applesauce or oil.
  • Mix in the grated zucchini until well combined.
  • Gradually add the wet ingredients to the dry, folding gently to combine.
  • If using, gently fold in nuts or chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Best served with a spread of almond butter or cream cheese. Can freeze well after cooling completely.
