Ingredients
  

Main Ingredients
  • 12 pieces fresh strawberries (tops removed) Choose firm and bright red strawberries
  • 1 piece ripe banana Cut into round slices
  • ¼ cup ricotta cheese Can substitute with cottage cheese, cream cheese, or coconut yogurt for a vegan option
  • 1 piece black gel icing pen For the eyes

Method
 

Preparation
  1. Remove the green leafy tops from the strawberries and slice a thin section from the top of each strawberry to create the Santa hat.
  2. Cut the banana into round slices, about ¼ inch thick, to create the base for Santa's face and beard.
  3. Generously spread ricotta cheese (or chosen alternative) on one side of each banana slice, forming a thick layer that resembles Santa's beard.
Assembly
  1. Place the sliced portion of the strawberry flat on a serving plate. Add the banana slice on top, cheese side facing down on the strawberry slice.
  2. Using the black gel icing pen, draw two small dots on the exposed banana slice to represent Santa's eyes.
  3. Place the larger part of the strawberry on top to complete Santa's iconic hat.
Serving
  1. Repeat these steps to make as many strawberry Santas as desired.

Notes

Best enjoyed fresh. Store any leftovers in an airtight container in the fridge for up to a day. Keep ingredients separate if preparing in advance.
