  • 3 pounds chicken thigh Use bone-in or boneless as preferred.
  • 1 cup soy sauce Low sodium can be used if desired.
  • 1 cup pineapple juice Or add pineapple chunks with juice.
  • 1 cup brown sugar Packed for best results.
  • 5 cloves mashed garlic Fresh garlic is recommended.
  • 1 tablespoon fresh ginger Minced for flavor.

Method
 

Preparation
  1. In a large bowl, combine the soy sauce, pineapple juice, brown sugar, garlic, and ginger. Mix well.
  2. Add the chicken thighs to the marinade and ensure they are fully coated.
  3. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
Cooking
  1. Preheat the grill or a skillet over medium-high heat.
  2. Remove the chicken from the marinade and grill or cook in the skillet for about 6-7 minutes on each side, or until the chicken is cooked through.
Serving
  1. Serve hot, optionally garnished with additional pineapple or green onions.

Notes

Marinate the chicken overnight for a deeper flavor. Don’t discard the marinade; you can boil it to make a tasty sauce. Use chicken breasts for a leaner option if desired. Experiment with adding different veggies to the skillet for variety.
