  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh pineapple chunks Use fresh pineapple for best flavor.
  • 1 piece red bell pepper, sliced
  • 2 tablespoons soy sauce For marinating chicken, if desired.
  • 2 tablespoons olive oil For cooking.
  • 1 tablespoon brown sugar
  • to taste Salt and pepper
  • Chopped green onions for garnish

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 5-7 minutes on each side, until golden brown and cooked through.
  4. Add the sliced red bell pepper and pineapple chunks to the skillet.
  5. In a small bowl, mix together the soy sauce and brown sugar, then pour it over the chicken and vegetables.
  6. Stir well and cook for an additional 5 minutes until everything is heated through and well combined.
  7. Garnish with chopped green onions before serving.

Notes

Serve with jasmine rice or quinoa to soak up the sauce. Refrigerate leftovers in an airtight container for up to three days.
