Ingredients

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice

For the kebabs

  • 1 lb chicken breast, cut into cubes Ensure the chicken is of even size for uniform cooking.
  • 1 medium bell pepper, cut into pieces
  • 1 medium red onion, cut into pieces
  • Skewers (soaked in water if wooden) Soaking prevents burning.

Preparation

  • In a bowl, combine ketchup, brown sugar, soy sauce, and pineapple juice to create a marinade.
  • Add the chicken and vegetables to the marinade, ensuring they are well coated.
  • Cover and refrigerate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken and vegetables onto the skewers.
  • Grill the kebabs for about 10-15 minutes, turning occasionally, until the chicken is cooked through.

Notes
