Ingredients
  

For the marinade

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice

For the kebabs

  • 1 pound chicken breast, cut into cubes Can substitute with chicken thighs or firm tofu.
  • 1 each bell pepper, cut into chunks
  • 1 each onion, cut into chunks
  • pieces Skewers (wooden or metal) Soak wooden skewers in water for at least 30 minutes before using.

Preparation

  • In a bowl, mix the ketchup, brown sugar, soy sauce, and pineapple juice to create a marinade.
  • Add the chicken cubes to the marinade and let it marinate for at least 30 minutes.
  • Thread the marinated chicken, bell pepper, and onion onto skewers.

Cooking

  • Preheat the grill to medium-high heat.
  • Grill the kebabs for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  • Serve hot and enjoy!

Notes

Serve Hawaiian Chicken Kebabs with coconut rice, coleslaw, or a drizzle of sweet chili sauce. Grilled pineapple slices make a great side as well. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
