  • 4 cups cooked rice Day-old or leftover rice is preferred.
  • 2 cups diced ham Can use leftover holiday ham or smoked sausage.
  • 1 cup peas Fresh or frozen.
  • 1 cup carrots Diced; can substitute with corn or bell peppers.
  • 2 large eggs Omit for a vegan option; tofu can be used instead.
  • 3 tablespoons soy sauce Low-sodium varieties recommended.
  • 1 tablespoon sesame oil Also can use vegetable or canola oil.
  • 1 teaspoon garlic powder Optional for extra flavor.

Preparation

  • Prepare your rice: Use day-old rice for the best texture. If not available, cook rice and spread on a baking sheet to cool for about 30 minutes.
  • Sauté the ham: Heat oil in a large skillet over medium-high heat. Add ham and brown slightly for about 2–3 minutes.
  • Add vegetables: Stir in peas and carrots for another 2 minutes until tender.
  • Incorporate eggs: Push veggies and ham to one side of the skillet. Crack eggs on the other side and scramble them until set, then mix everything together.
  • Fry the rice: Add cold rice, breaking clumps. Drizzle with soy sauce and stir continuously for 5–7 minutes, allowing rice to heat through and get slightly crispy.
  • Final touches: Taste and adjust soy sauce if necessary. Finish with sesame oil and garnish with chopped green onions if desired.

Notes

Maintain high heat to prevent mushy rice. Don’t overcrowd the pan and consider making smaller batches if necessary.
