  • 8 oz halloumi cheese, sliced Choose fresh and firm halloumi for the best results.
  • 3 cups seedless watermelon, cubed Use ripe, sweet watermelon for enhanced flavor.
  • 1/4 cup fresh mint leaves, torn Fresh mint adds a vibrant flavor.
  • 1 tablespoon olive oil (for grilling) Brush oil to prevent sticking.
  • 1 tablespoon balsamic glaze (optional) This adds a nice sweetness.
  • to taste Salt and black pepper Adjust to personal preference.

Preparation

  • Preheat a grill pan over medium-high heat.
  • Brush halloumi slices lightly with olive oil.

Grilling

  • Grill halloumi for 2-3 minutes per side, until golden and slightly crisp.
  • Remove from the grill and let it cool slightly.

Assembly

  • In a large serving bowl or platter, combine watermelon cubes and grilled halloumi.
  • Sprinkle with fresh mint, season with salt and pepper, and drizzle with balsamic glaze if desired.
  • Serve immediately.

Notes

Serve chilled or at room temperature. Best enjoyed fresh but can be stored in an airtight container for 1-2 days.
