Halloumi & Bulgur Salad with Dried Apricots, Mint & Citrus Dressing

Ingredients
  

Salad Base

  • 1 cup bulgur wheat
  • 1 3/4 cups boiling water to soak bulgur wheat
  • 7 oz halloumi cheese, sliced can substitute feta or goat cheese
  • 1/4 cup dried apricots, chopped
  • 1/4 cup chopped pistachios or almonds for added crunch
  • 1/2 small red onion, finely diced
  • 1 small cucumber, diced
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh parsley

Citrus Dressing

  • 1 orange Juice and zest of
  • 1/2 lemon Juice of
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt & pepper, to taste adjust according to preference

Instructions
 

Preparation

  • Place bulgur wheat in a large bowl and pour boiling water over it. Cover and let sit for 15–20 minutes until all the water is absorbed. Fluff with a fork.
  • While the bulgur rests, whisk together all dressing ingredients in a small bowl until smooth and set aside.

Cooking

  • Heat a grill pan or non-stick skillet over medium heat and grill halloumi slices for 1–2 minutes per side until golden brown.
  • Add chopped apricots, nuts, onion, cucumber, mint, and parsley to the fluffed bulgur.
  • Toss gently with the citrus dressing.
  • Top with warm grilled halloumi and an extra drizzle of dressing before serving.

Notes

To enhance the dining experience, serve alongside grilled chicken or fish. A dollop of yogurt can add a cooling contrast. Best served cold leftovers, but halloumi can be warmed briefly in a skillet.
