Ingredients
  

For the cake

  • 1 box strawberry cake mix
  • 1 1/3 cups guava nectar or juice
  • 3 large eggs
  • 1/3 cup butter, melted

For the frosting

  • 8 oz cream cheese, softened Ensure it is soft for easy mixing
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 8 oz Cool Whip

For the guava glaze

  • 2 cups guava nectar or juice
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 3 Tbsp water
  • 1 drop red food coloring Optional, for color

Preparation

  • Pour the strawberry cake mix in a bowl. Add the guava nectar, eggs, and melted butter. Mix with an electric mixer until well incorporated.
  • Pour the mixture into a greased 9 X 13 pan. Bake at 350°F for 28-33 minutes or until a toothpick comes out clean. Cool completely before frosting.

Frosting

  • In a separate bowl, mix together the cream cheese, sugar, and vanilla until smooth. Fold in the Cool Whip and keep refrigerated until ready to add to the cake.

Guava Glaze

  • In a pot, combine the guava nectar and sugar, bringing it to a boil.
  • In a small bowl, mix the cornstarch and water, then add to the guava mixture. Boil for one additional minute. If desired, add 1 drop of red food coloring. Let cool in the refrigerator.

Assembly

  • Spread the cream cheese mixture evenly over the cooled cake.
  • Pour the guava glaze on top and spread evenly. Refrigerate for at least 1 hour before serving.

Notes

Serve chilled for a refreshing dessert. It pairs beautifully with ice cream or whipped cream. Store tightly covered in the refrigerator for up to 5 days.
