  • 1 pound lean ground beef
  • 5 cups green cabbage, shredded or chopped
  • 1/4 cup low carb taco seasoning
  • 1 Tbsp dry minced onion
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese

Cooking

  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add the shredded cabbage and taco seasoning to the skillet, stirring to combine.
  • Pour in the water and add the dry minced onion.
  • Cover the skillet and let it cook until the cabbage is tender, about 10 minutes.
  • Remove the lid, stir in the cheddar cheese, and cook just until melted. Serve hot.

Notes

Serve warm with sour cream, fresh avocado slices, or a sprinkle of cilantro. Store leftovers in an airtight container for up to three days, or freeze for three months. Reheat on the stovetop or microwave.
