  • 2.5 pounds Yukon gold potatoes, washed
  • 2 pounds lean ground beef Use lean ground beef for a healthier option.
  • 1 cup finely diced sweet yellow onion
  • 1 tablespoon minced garlic

Preparation

  • Preheat the oven to 375°F (190°C).
  • Peel and slice the Yukon gold potatoes into thin rounds.
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  • Layer half of the sliced potatoes in a greased baking dish.
  • Spread the beef mixture over the potatoes.
  • Top with the remaining potato slices.
  • Season with salt and pepper to taste.
  • Cover with foil and bake for 45 minutes, then remove the foil and bake for another 15 minutes until the potatoes are tender and golden.
  • Let it cool for a few minutes before serving. Enjoy!

Notes

Ground Beef Potato Casserole is delightful on its own, but can be served with a fresh green salad or steamed vegetables. Consider adding sour cream or fresh herbs for extra flavor.
