  • 1 lb lean ground beef Use lean ground beef to reduce fat content.
  • 4 medium Yukon Gold or Russet potatoes, diced About 2 lbs.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Adjust to taste.
  • 1 tsp paprika
  • 1 tsp dried thyme

Preparation

  • Sauté the onion and garlic in a large skillet over medium heat with a drizzle of olive oil until fragrant, about 3 minutes.
  • Add the ground beef and cook until browned for approximately 8-10 minutes, breaking it apart as it cooks.
  • Season the mixture with salt, black pepper, paprika, and thyme; mix well.
  • Stir in the diced potatoes and beef broth, bringing to a gentle simmer.
  • Cover the skillet and let it cook for 20-25 minutes until the potatoes are fork-tender.
  • Before serving, taste and adjust the seasoning if needed.

Notes

For serving, pair with a green salad or steamed vegetables. A dollop of sour cream and chopped fresh herbs can enhance the dish. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months.
