Ingredients
  

Couscous Base

  • 1 cup Couscous or use quinoa for a gluten-free alternative
  • 3 cups Arugula can substitute with spinach or kale

Grilled Elements

  • 2-4 pieces Ripe Peaches firm peaches are best for grilling
  • 8 ounces Halloumi Cheese can substitute with feta or goat cheese

Dressing

  • 2-3 tablespoons Olive Oil
  • 1 piece Lemon Juice from 1 lemon
  • 1 tablespoon Honey optional for extra sweetness
  • to taste Salt and Pepper

Garnish

  • as desired Fresh Herbs like mint or basil for garnish

Instructions
 

Preparation

  • Bring 1 cup of water to a boil. Add couscous and a pinch of salt, remove from heat, cover, and let sit for about 5 minutes, then fluff with a fork.
  • Cut the peaches in half and remove the pit. Brush the cut sides lightly with olive oil. Preheat the grill to medium heat, and grill the peaches, cut side down, for 4-5 minutes until charred and tender.
  • Slice the halloumi cheese into ½-inch thick slabs. Add them to the grill and cook for about 2-3 minutes on each side until golden brown and crispy.

Assembly

  • In a large bowl, combine the fluffed couscous with arugula and gently toss in the grilled peaches. Add the grilled halloumi cubes on top.
  • Drizzle with olive oil, lemon juice, and honey, mixing lightly to combine the flavors.
  • Season with salt and pepper to taste. Add any fresh herbs you desire for an added burst of freshness.

Serving

  • Serve warm as a side dish or a light main course.

Notes

For best results, select peaches that are firm but slightly ripe. Overripe peaches can become mushy on the grill.
