Ingredients
  

Flatbread Base

  • 1 piece store-bought or homemade flatbread or naan

Toppings

  • 1 ripe peach sliced Use ripe peaches for best flavor.
  • 1/4 cup goat cheese Can be substituted with feta or ricotta.
  • 1 teaspoon olive oil For brushing peach slices.
  • 1 cup fresh arugula Can substitute with spinach if preferred.
  • 1 tablespoon chopped fresh mint Fresh mint enhances flavor.
  • 1 tablespoon honey or balsamic glaze
  • 1 pinch sea salt
  • to taste freshly ground black pepper

Instructions
 

Preparation

  • Preheat your grill or grill pan over medium-high heat.
  • Lightly brush the peach slices with olive oil.
  • Grill the peach slices for 1–2 minutes on each side until they are tender and have nice grill marks.
  • While the peaches are grilling, warm the flatbread in the oven or on the grill for 2–3 minutes.

Assembly

  • Once the flatbread is warm, arrange the grilled peaches on top.
  • Sprinkle the crumbled goat cheese over the peaches.
  • Add the fresh arugula and chopped mint on top.
  • Drizzle honey or balsamic glaze over the flatbread.
  • Season with a pinch of sea salt and freshly ground black pepper.
  • Slice the flatbread and serve warm.

Notes

For best texture, store separate toppings if you have leftovers. Pairs nicely with crisp white wine or a sparkling beverage.
