Ingredients
  

Main Ingredients

  • 2 pieces ripe peaches, halved and pitted Choose ripe but firm peaches for grilling.
  • 1 tablespoon olive oil Used for brushing peaches.
  • 5 oz arugula or mixed greens Base of the salad.
  • 1 ball fresh burrata cheese Torn and added to the salad.
  • 1/4 cup toasted pecans or walnuts Enhances flavor and crunch.
  • 1/4 small red onion, thinly sliced Adds sharpness to the salad.
  • Fresh basil leaves for garnish Used for a fresh touch.

Vinaigrette Ingredients

  • 2 tablespoons balsamic vinegar Base of the vinaigrette.
  • 1 tablespoon honey For sweetness.
  • 3 tablespoons olive oil Used in the vinaigrette.
  • 1/2 teaspoon Dijon mustard Adds depth to the vinaigrette.

Instructions
 

Preparation

  • Preheat your grill or grill pan over medium heat.
  • Brush the cut side of the peach halves with olive oil.
  • Grill the peaches cut-side down for 2–3 minutes until they are charred and caramelized.
  • Once cool enough to handle, slice the peaches.

Vinaigrette Preparation

  • In a small bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, salt, and black pepper until well mixed.

Assembly

  • On a serving platter, layer the greens, grilled peach slices, red onion, and toasted nuts.
  • Tear the burrata and nestle it into the salad.
  • Drizzle the honey-balsamic vinaigrette over the salad and scatter fresh basil on top.
  • Serve immediately and enjoy the sweet-savory summer flavors!

Notes

Best served fresh. Store leftovers in an airtight container in the refrigerator for up to a day.
