Salad Ingredients

  • 2 pieces ripe peaches, halved and pitted Choose ripe peaches for the best sweetness.
  • 8 oz burrata cheese Can be substituted with feta or goat cheese.
  • 4 cups arugula or mixed greens Use fresh greens for the best flavor.
  • 1/4 cup toasted almonds or pecans Toasting enhances their flavor and crunch.

Vinaigrette Ingredients

  • 1 tablespoon olive oil (for grilling) Brush on peaches before grilling.
  • 1 teaspoon Dijon mustard Adds a nice tang to the dressing.
  • 2 tablespoons balsamic vinegar Use a high-quality balsamic for best results.
  • 1 tablespoon honey Adjust based on sweetness preference.
  • 3 tablespoons olive oil For the vinaigrette.
  • Salt and black pepper to taste Salt and black pepper, to taste Season as needed.

Preparation

  • Preheat your grill or grill pan to medium-high heat.
  • Brush the peach halves with olive oil and grill them for 2–3 minutes on each side until they are charred and tender.
  • Remove the peaches from the grill and slice them.

Vinaigrette

  • In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and olive oil until well combined.

Assembly

  • Arrange the arugula or mixed greens on a serving platter.
  • Top the greens with the grilled peach slices and torn burrata cheese.
  • Sprinkle with toasted almonds or pecans and drizzle generously with the honey-balsamic vinaigrette.
  • Season with salt and pepper to taste. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to a day. Best served fresh.
