Main Ingredients

  • 4 pieces Ripe Peaches Use ripe peaches for optimal sweetness and flavor.
  • 8 cups Fresh Arugula, Washed & Dried Fresh arugula adds a peppery bite.
  • 4 balls Medium Sized Balls of Burrata or Fresh Mozzarella If burrata is hard to find, fresh mozzarella is a great substitute.
  • Extra Virgin Olive Oil Drizzle just before serving to keep ingredients fresher.
  • Aged Balsamic Vinegar Drizzle just before serving.
  • Sea Salt
  • Cracked Black Pepper

Preparation

  • Cut the peaches into wedges and lightly brush with olive oil.
  • Grill the peaches on a hot grill until browned.
  • Arrange the arugula onto four plates, then arrange the peach slices around the plate.
  • Arrange the cheese around the peaches.
  • Just before serving, drizzle some extra virgin olive oil over the plates, followed by a teaspoon or so of the aged balsamic.
  • Season each plate with sea salt and cracked pepper, then serve immediately.

Notes

This salad pairs beautifully with grilled chicken or fish for a complete meal. You can also serve it alongside crusty bread or paired with a light soup for a refreshing lunch. For variations, add sliced jalapeƱos or fresh herbs like basil or mint.
