Salad Ingredients

  • 4 pieces Ripe Peaches Use ripe peaches for the best flavor.
  • 8 cups Fresh Arugula, Washed & Dried Provide a bed for the peaches.
  • 4 balls Medium Sized Balls of Burrata or Fresh Mozzarella Can substitute with goat cheese.

Dressing and Seasoning

  • Extra Virgin Olive Oil For brushing and drizzling.
  • Aged Balsamic Vinegar Drizzle for added flavor.
  • Sea Salt For seasoning.
  • Cracked Black Pepper For seasoning.

Preparation

  • Begin by cutting the peaches into wedges and lightly brush them with olive oil.
  • Grill the peaches on a hot grill until they are browned, about 3 minutes on each side.

Assembly

  • Arrange the arugula on four plates, creating a lovely bed for the peaches.
  • Artfully arrange the grilled peach slices around the plates.
  • Place the creamy burrata around the peaches.
  • Drizzle some extra virgin olive oil over each plate, followed by a teaspoon or so of the aged balsamic.
  • Season with sea salt and cracked black pepper for a delicious finish, and serve immediately.

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the fridge for up to 24 hours. Keep dressing separate to preserve the arugula's crispness.
