Base Ingredients

  • 1 cup couscous A quick-cooking grain that serves as the perfect base.
  • 2 fresh peaches Choose ripe, juicy peaches to grill for optimal sweetness.
  • 8 ounces burrata cheese The star of the dish, creamy burrata adds richness.

Flavor Enhancers

  • 2 tablespoons olive oil For drizzling and to enhance flavors.
  • 2 tablespoons balsamic glaze Adds acidity and sweet notes.
  • to taste salt To season and bring out the flavors.

Fresh Herbs

  • 1 handful fresh basil or mint Provide herbal freshness.

Instructions
 

Grilling the Peaches

  • Preheat your grill to medium-high.
  • Cut peaches in half and remove the pit. Brush with olive oil. Place cut side down on the grill for about 4-5 minutes until grill marks appear and they soften.

Cooking the Couscous

  • Boil 1 cup of water with a pinch of salt, add 1 cup of couscous, and remove from heat.
  • Cover for 5 minutes, then fluff with a fork.

Combining Ingredients

  • In a large bowl, combine the fluffed couscous, grilled peaches (cut into slices), and a handful of torn burrata.

Dressing the Salad

  • Drizzle the salad with olive oil and balsamic glaze, sprinkling salt and freshly cracked pepper to taste.

Adding Fresh Herbs

  • Toss in chopped basil or mint and gently mix to combine all the elements without breaking the burrata too much.

Serving

  • Plate the salad beautifully, perhaps offering additional burrata and a drizzle of glaze on top. Enjoy while warm, or allow to cool for a refreshing summer meal.

Notes

Perfectly grilled peaches should be beautifully charred on the outside while remaining tender and juicy inside. Use ripe but firm peaches to prevent mushiness.
